MARY'S SPICY THAI PESTO SAUCE WITH PASTA

INGREDIENTS:
6 cloves of garlic
1 red onion
A dozen or so kalamata olives (don't skimp)
A can of stewed tomatoes
A splash of red wine
All-Natural Spicy Thai Pesto to taste
3/4 lb linguini, angel hair, or fettucine pasta
Salt and pepper to taste
Parmesan cheese to sprinkle on top

DIRECTIONS: Sauté chopped garlic and red onion in olive oil until onion is glossy (about 5 minutes). Add pitted kalamata olives, 1-2 Tbsp Spicy Thai Pesto, and red wine and cook for a few minutes, allowing flavors to blend. Sprinkle with salt and pepper.

Add can of stewed tomatoes. Cover and simmer. Not-so-timid tastebuds may choose to coat hot, drained pastas with another little bit of Spicy Thai Pesto before serving with sauce. Remember, a little bit of this pesto goes a long way flavorwise. Taste and see how much is right for you. Top with parmesan and serve with a favorite glass of red wine, a nice mixed green salad, and warm bread.
