GRILLED SWORDFISH WITH CILANTRO PESTO

INGREDIENTS:
1/4 cup All-Natural Cilantro Pesto
1/4 cup lime juice
1/4 cup Herb-Infused Olive Oil
3 cup ripe tomatoes, diced and peeled
Salt and freshly ground pepper
4 swordfish steaks, 3/4" thick (approx. 1/3 lb. each)

DIRECTIONS: Combine the pesto, lime juice, olive oil, tomatoes, salt, and pepper in a small bowl. Place the swordfish pieces in a shallow glass or non-aluminum dish and cover with the marinade. Let sit for at least 2 hours, turning the fish at least once. Prepare the grill for medium-heat cooking, and brush it with some oil. Grill the swordfish approx. 5 minutes on each side until it tests done. Heat the remaining marinade in a saucepan. Pour over fish and serve hot.
