Two Firms Launch Dinners with Local Ingredients

The Capital Times — 11/06/08

Two Wisconsin food companies are making it easier to eat locally grown and produced meals with the unveiling of ready-to-heat gourmet dinners.

RP's Pasta Company of Madison and Renaissance Farm of Spring Green are collaborating to launch the new product category in retail grocery shopping, with seven dishes that include 11 local ingredients.

The line of gourmet meals will be available Friday in the frozen food section at Metcalfe's Sentry at Hilldale Shopping Center.

"Our mission is to create and share flavorful, ready-to-eat gourmet dinners produced from foods grown and crafted right here in Wisconsin," said Mark Olson, president of Renaissance Farms.

Olson and Peter Robertson, owner of RP's Pasta, will be in their respective booths at the Dane County Farmers' Market on Saturday, and they will also point out other vendors at the market who are supplying ingredients for the line of dishes.

"As the owners of local food companies, Mark and I work with fresh, wholesome ingredients grown and crafted by Wisconsin farmers and cheesemakers every day," Robertson said.

The dinners are expected to retail for less than $8 each.

Dinners include lemon basil pesto ravioli with roasted garlic cream sauce, butternut squash ravioli with gorgonzola cream sauce and four cheese tortellini with basil and tomato sauce, paired with buttered carrots.

Local growers and cheesemakers supplying their ingredients to the gourmet meals include Hook's Cheese in Mineral Point, Cedar Grove Cheese in Plain, Sassy Cow Creamery in Columbus, Grassland Dairy in Greenwood, Grande Dairy in Brownsville, Wisconsin Farmers Union in Montfort, Carr Valley Cheese in LaValle, Sutter Farm in Mount Horeb and a variety of farms providing the vegetables and garlic.

The pastas in the dishes are from RP's Pasta, and the herbs, olive oils and pesto are from Renaissance Farm.
